The version you're referring to is the Juggernaut hack. For now, UMK3 TE doesn't have them on the screen, but Human Smoke is accessed the same way, and Noob is accessed by selecting classic Sub Zero, and doing Back + LP + LK + Run + BLK before the match starts.
